Ingredients:
CAKE:
4 c Swan Down cake flour
1 1/2 c Crisco oil
3 c brown sugar
2 cans carrots, drained and mashed
6 eggs
2 Tblsp baking powder
Cinnamon
Nutmeg
ICING:
2 bars cream cheese, softened
1 1/2 c powdered sugar
1 tsp vanilla
1 c nuts, chopped
Preparation:
1. Mix cake ingredients. Bake at 350 for 30 minutes or until done.
2. Whip icing ingredients (can stir nuts into icing or sprinkle on top). Ice cake.
Alternative: Add nuts to cake batter instead of icing.
