Cheese Log

Ingredients
2 lb Velveeta cheese, room temperature
1 pkg cream cheese, softened
5 tblsp pickled jalapenos, chopped fine
1-2 bunches scallions, very finely chopped

Preparation
Place cheese between 2 layers of wax paper and roll out into a large rectangle with a rolling pin. Remove top layer of wax paper.

Using a soft spatula, spread cream cheese gently and evenly over cheese. Evenly sprinkle jalapenos and scallions on top of cream cheese, reserving a handful of scallions for garnishing.

Carefully peel cheese from bottom layer of wax paper and roll into a jelly roll shape. Seal ends by pressing edges closed. Shape into desired form (ring or loaf), and garnish with scallions (can also coat with chopped pecans).

Serve with crackers.

Recipe may be halved. Serves MANY.
