Ingredients
10 oz sour cream
1 lb Velveeta cheese (NOT low-fat)
Tobasco to taste
Dash or Worchester Sauce
Sprinkly of red pepper flakes
Salt and pepper to taste
1 can black beans, warmed and drained
1 to 2 tomatoes, diced
1/2 bunch scallions, diced
Grilled or broilled chicken breast with mesquite seasonings, sliced
4-6 servings pasta, penne preferred
Preparation
Melt Velveeta and sour cream in saucepan while cooking pasta. Add spices to cheese mixture when melted. Drain pasta and put in serving bowls. Spoon sauce over pasta. Top with beans, tomatoes, scallions, and chicken. Serve with warm, crusty bread.
